SPICED APPLE CAKE

Preheat the oven to 170oC. Grease a 2lb loaf tin and put to one side. Sieve the flour, baking powder and spices into a large bowl, and also put aside for now. Take a heavy based saucepan and add the margarine, sugar and syrup or honey to it. Warm the pan over a medium heat until the ingredients have melted together, then set that aside to cool a little. Meanwhile peel, core and slice the apples. If you prefer smaller pieces of fruit in your spiced apple cake you can chop most of them, but do leave some as slices to decorate the top. To stop the slices going brown you can sprinkle them with a little lemon juice. Pour the cooled pan ingredients into the flour mix and stir thoroughly, then add the beaten egg and the apple pieces (save a few for decoration). Also mix in the chopped stem ginger. Pour the mixture into your loaf tin, lay the reserved apple slices on top and sprinkle them with a little demerara sugar. Cook for an hour or until a knife inserted into the cake comes out clean. I find with my oven that an hour is enough, but when I cooked this apple cake recipe in my parents oven it took a little longer, so you may need to adjust the timing slightly. Leave to cool in the tin before you try to turn the cake out. |
