This week we will start with a healthy vegetable and Navy bean stew. The Navy bean also known as the hariot or pea bean is known to be a good source of iodine. SERVE WITH THYME INFUSED POLENTA
Mix 1 cup of polenta with 1 cup of vegetable stock and 1/2 cup of water. Add some crushed fresh thyme, grind some pepper and mix thoroughly over a medium high heat. Continuing to focus on Iodine as an element we would like to replenish for our throat chakra and the thyroid gland, we have included a Prawn Thai green curry. Having the right amount of Iodine helps to protect the thyroid from free radical damage. Having low amounts of Iodine can throw your hormones out of whack because it has a direct effect on your thyroid gland, which in turn regulates many of your hormones. Therefor Thursdays will be an excellent seafood day, a complimentary day for topping up our Iodine intake.

DIRECTIONS.
- For the curry paste, lightly toast the coriander and cumin seeds in a dry frying pan, until fragrant.
- Place the seeds into a pestle and mortar, and add the shallot, chillies, garlic, ginger, lemongrass and salt. Pound to a paste with the pestle. Alternatively, you can use a food processor to do this.
- Cut the coriander stalks into chunks, and set aside the leaves for later. Add the coriander stalks and crumble the dried kaffir lime leaves to the mix, and continue to grind until fairly smooth.
- Add the fish sauce and a pinch of white pepper, to season. The curry paste is now ready to use. If not using immediately, the paste can be stored in a jar topped with a little oil and will keep in the fridge for a couple of weeks.
- For the curry, heat the vegetable oil in a wok or large frying pan over a medium heat. Add the chopped aubergines and fry for 4-5 minutes, until browned all over and starting to soften. Cook for another 10 minutes until the aubergines are golden-brown and softened.
- Add the solid fat from the top of the can of coconut milk and then add the Thai green curry paste and fry for 2-3 minutes until the paste has cooked a little and is fragrant.
- Add the remaining coconut milk, bring to the boil, then lower the heat to a simmer. Add the green beans and continue cooking for 2-3 minutes, stirring occasionally.
- Allow the coconut milk to reduce and thicken slightly before adding the chicken stock.
- Add the sugar and the fish sauce to the curry. Add the broccoli flowers, cook for 5 mins
- Add the raw king prawns and cook for 3-5 minutes until they turn pink and are cooked through. Then quickly throw in the finely grated carrot, it won't take long to soften.
- Crumble in the crushed kaffir lime leaf, fresh lime juice and zest, and chopped coriander.
- Serve with fresh roti bread, steamed jasmine rice, and sprinkle over the reserved coriander leaves.

Today we will use eggs as the main ingredient to nourish the thyroid gland with its plentiful source of Iodine. This delicious quiche can be served with a hearty side salad..
ROASTED BEET, KALE & GOATS CHEESE QUICHE

DIRECTIONS
To make the crust, whisk together the flour, 2 tablespoons toasted sesame seeds and salt in a medium size bowl. Toss in the cold, cubed butter and then, using your fingers or a dough cutter, work the butter into the flour mixture. Try to work quickly and break the butter down into the flour mixture. Whisk together the egg and buttermilk (or water). Create a well in the butter and flour mixture and pour in the cold buttermilk/egg mixture. Use a fork to bring the dough together. On a lightly floured work surface, dump out the dough mixture. It will be moist and shaggy. Gently knead the dough into a round, flat disk. Grease a 9 or 10 inch tart pan with cooking spray, sprinkle the bottom and sides of the pan with toasted sesame seeds. Roll the dough out on a lightly floured surface to a 15-inch circle. Press the dough into the bottom of the prepared pan and up the sides. Cover and then refrigerate for 30 minutes. Preheat the oven to 375 degrees F. Next, add the beets, onion, olive oil, balsamic vinegar and a good pinch of salt + pepper to a large cookie sheet or roasting pan with sides. Toss well to combine. Roast for 25-30 minutes or until the beets are tender and lightly charred. During the last 5 minutes, toss in the baby kale and continue to roast until the kale has wilted. Remove from the oven. Once cool enough to handle, chop the onion into thin slices. |
Reduce the oven temp to 350 degrees F.
While the veggies roast, whisk the eggs, greek yogurt, heavy cream, parsley, dill, crushed red pepper and a good pinch of salt + pepper in a bowl until combined. Stir in the brie and half of the shredded fontina cheese.
Add the roasted veggies to bottom of you tart pan. Pour the egg mixture over the veggies. Top with the remaining fontina cheese. Place the tart pan on a cookie sheet and bake on the middle rack in the oven for 50-60 minutes or until the quiche is set and no longer jiggly in the center.
Let the quiche sit 5 minutes for before cutting and then EAT!
NOTE : Dairy is not considered great for the lungs according to chinese medicine it promotes phlegm and dampness. If you have phlegm maybe omit the goats cheese and the yoghurt consider using almond milk instead.

It is packed with exciting flavours that will accompany your quiche beautifully. The properties of this salad that directly heal the lungs which are connected to the throat chakra. Is the cauliflower which is known to reduce phlegm which is a common lung disturbance. Along with pomegranate which is one of the strongest antioxidants available and highly beneficial for lung damage. In general it is packed with goodies for the whole body.
INGREDIENTS
1 cup cooked chickpeas large handful of spinach 3/4 cup baby spinach leaves 2 grilled corn on cob 1/3 cup goats cheese small cauliflower flowerettes 1/3 cup oven roasted hazelnuts small handful of pomegranate seeds handful of fresh corriander 2 tblsp cinnamon 2 tbls caramalised grape vinegar 3 tblsp olive oil 1/4 cup olive oil dash of sesame oil lime rind off 1/2 lime salt pepper |
METHOD
Earlier in the day prepare pre soaked chickpeas. Boil them until they are not too soft and not too firm. Remove from heat and let them cool for later. In a small dish place a couple of tblsp of olive oil with salt pepper and cinnamon, mix and add the small chopped cauliflower flowerettes. Chop the corn off the cobs and add to this mix. Toss and coat. Place this mix onto a baking tray lined with baking paper, into a moderate oven for about 15 minutes until brown. Towards the end of the baking process move the cauliflower to one side of the tray and place the hazelnuts to roast. Take everything out of oven when golden brown and let it cool. |

- Pour the batter into the prepared pan and sprinkle evenly with 1 tablespoon of granulated sugar. Bake for about 40 minutes, or until the cake is lightly golden and a toothpick inserted into the center comes out clean. Allow the cake to cool until just warm.
